A green restaurant from design to plate, Väkst in the heart of Copenhagen is a cool new place to dine. Opened in May this year within the 4* boutique hotel SP34 and addition to the Cofoco restaurant family. So excited to sample the culinary delights of this urban greenhouse restaurant, I made sure it was on the list during my last visit to Copenhagen.
Väkst, meaning growth in Danish, takes gastronomy based on fresh Nordic vegetables, seasonal meat and fish. The restaurant is designed as a green oasis in the city with an abundance of hanging plants, outdoor bulb lighting and up-cycled furniture. A greenhouse is built in the centre of the restaurant stretching over two floors. The basement design develops into a light filled, concrete urban setting with nods of greenery and up-cycled furniture.
As a chair geek I was quite taken back with the dining chairs. I know that sounds sad but they were so comfy and looked so beautiful. I found out that during the renovation of SP34, the architect found the chair and loved it so much he immediately research the design origin. Finding that no one owned the design rights for the chair, Brøchner Hotels decided to put in into reproduction, naming it the SP34 chair.
While the restaurant was stunning and relaxing, the food was equally beautiful and super tasty too! It was the perfect indoor garden oasis in old town Copenhagen.
