Höst in Copenhagen is a restaurant that creates the most delicious new nordic cuisine. Designed in collaboration with Cofoco, Norm Architects and Menu it is truly beautiful. Winning 3 international design awards there’s no doubt that Höst is the perfect place for a design lover to dine.

I visited Höst for my birthday and was overwhelmed by the quality of food, service and such stunning surroundings. The restaurant is a perfect example of everything that I love about design, industrial, bleak, natural, high quality, minimal, simplified, unpretentious and inspiring. Not only were there many products by Norm Architects and Menu, there were also salvaged items, raw wooden furniture too.

What is new nordic cuisine? It could be thought that it originated in 2004, by René Redzepi and Claus Meyer. The chefs of the now famous Noma restaurant, reinvented Nordic food by emphasising purity, simplicity, seasonal foods and social responsibility. Nordic countries celebrated this and many chefs took on this style of cooking.

New nordic cuisine isn’t just pretty food on a plate that’s locally sourced. “In 2005 the chefs passed the baton to the Nordic Council of Ministers, which put New Nordic Food on the political agenda. The Nordic Council of Ministers for Fisheries, Aquaculture, Agriculture, Food and Forestry adopted a venture that aimed at developing the concept of New Nordic Food into a lifestyle which will be better for nature, for people and for Nordic society as a whole.” quote from

Head chef Jonas Christensen has demonstrated this with his menu at Höst. This new nordic cuisine is incredible, I loved the food so much and can’t wait to go back to Höst again.

If you are visiting Copenhagen and want to go to Höst, I advise you to book well in advance as it’s very popular. Save up some money, it’s not cheap but it’s worth every penny. Also get the wine pairing, always get the wine pairing.

    Hi Hannah. I had dinner here in December 2015 and we also really enjoyed it. The place itself is really cool and the food was great. As you say, not cheap but we had a kind of short tasting menu with wine and it was good value for Copenhagen.
